Bruce Aidells founded Aidells Sausage Company in 1983 in Bolinas, California, drawing on French charcuterie techniques to produce sausages unlike anything in American supermarkets. Aidells was a former cooking instructor and food writer who believed that American sausage — dominated by commodity pork products loaded with fillers and preservatives — could be dramatically better. He made chicken and poultry sausages with actual herbs, real wine, natural casings, and hardwood smoke, then sold them at the Berkeley farmers market.
