Aidells was a former cooking instructor and food writer who believed that American sausage — dominated by commodity pork products loaded with fillers and preservatives — could be dramatically better. He made chicken and poultry sausages with actual herbs, real wine, natural casings, and hardwood smoke, then sold them at the Berkeley farmers market.
The product was immediately recognized as exceptional by the Bay Area food community, and distribution expanded to restaurants and specialty stores. Aidells grew from a one-man operation into a substantial Bay Area food company before being acquired by Sara Lee Corporation in 1999 and later by Tyson Foods.
