Heritage & History

Bueno Foods traces its roots to The Ace, a small neighborhood grocery store the Baca brothers opened in Albuquerque after returning from service in World War II. When national grocery chains arrived, the brothers began selling their mother Filomena's home-cooked dishes. In the early 1950s they started flame roasting New Mexico green chile and freezing it so it could be eaten year-round. In 1951 they formed a partnership, moved the operation to Airway Road and began making corn and flour tortillas, red chile, tamales and posole with five employees.

The company says the Baca brothers were the first to process green chile on a commercial scale, building their own roasting equipment because none existed. Jacqueline Baca joined in 1979 and became president in 1986. The family later introduced GRANDMA'S Tortillas (1996/97) and Autumn Roast green chile (1999), and Gene Baca co-founded the New Mexico Chile Association in 2006. Bueno describes itself as a local, family-owned, minority- and woman-owned company now in its seventh decade.

Made in Albuquerque, New Mexico

In 1983 Jacqueline Baca arranged financing for a new plant in Albuquerque's Barelas neighborhood, where her father and uncles had their roots. It opened in 1984 and was expanded in 1989 and again in 1996-97. A 2022 expansion added a freezer the company says will be the largest green and red chile freezer in the U.S. Bueno flame roasts its green chile, nixtamalizes corn in the traditional way, and stone grinds all of the corn for its tortillas and tamales.

The company says it sources its green chile from New Mexico's Hatch and Rio Grande valleys and builds its prepared foods on recipes handed down through generations. It holds SQF (Safe Quality Food) certification and says it continues to craft its New Mexican foods in the heart of Albuquerque.
