Named for the freighter Huey Fong
David Tran, a former South Vietnamese Army major, arrived in the United States in 1979 among the Vietnamese boat people. He incorporated Huy Fong Foods in Los Angeles in February 1980 and named it after the freighter that carried him out of Vietnam. The rooster on the bottle is his sign on the Chinese zodiac. The company has never advertised and grew by word of mouth.
Huy Fong moved to a 68,000-square-foot building in Rosemead, California, in 1987, then opened its Irwindale plant in 2010 on 23 acres with about 150,000 square feet of production space.
One factory, three sauces, chilies from more than one country
Every Huy Fong product we list, from the 9 oz to the 28 oz Sriracha, the Chili Garlic Sauce and both sizes of Sambal Oelek, is made at 4800 Azusa Canyon Road in Irwindale. The company's tour brochure describes each bottle being filled with one of its three sauces and capped there.
The peppers are a different story. For 28 years most of them came from Underwood Ranches in Ventura County, California. That partnership ended in 2016, and a jury later awarded Underwood $23.3 million. A drought in Mexico halted production in June 2022, and CNBC reported in 2023 that Huy Fong now sources peppers from farms in California, New Mexico and Mexico. The sauce is made in California, but the chilies in a given bottle may not be.
