Eugenia Duke began making sandwiches in 1917 to sell at Camp Sevier. Her mayonnaise became so beloved that soldiers wrote requesting jars after the war. By 1923 she opened a dedicated plant in Greenville. In 1929 she sold the recipe to C.F. Sauer Company.
Through every ownership transition, the recipe has stayed intact -- no added sugar, a higher egg-yolk ratio, and apple cider vinegar tang.
